Cauliflower Mac and Cheese

Cauliflower - meh! Cauliflower with cheese - I’m listening!! Can anyone else relate?? Darrell has been the driving force in trying cauliflower-based foods. Knowing he likes it has me looking out for cauliflower-related recipes. The loaded cauliflower turned out sooo yummy last month so when I came across a recipe for cauliflower mac and cheese I thought we’d give it a try! The first time we tried this recipe was actually the night I photographed the fried pork chops for the blog. It was our side dish that night and then Darrell cooked it for lunch one day earlier this week!

While there are several recipes out there for this dish, we used a recipe from Tasty because a video caught my eye, haha. It only requires 5 ingredients is relatively quick to cook.

Notes

  • The recipe says to use sour cream or greek yogurt. We used sour cream since it’s what we had on hand.

  • As expected for us cheese lovers, we thought it could use more cheese, haha! So add as you see fit. We used sharp cheddar.

  • The second time we cooked it, I’m thinking we didn’t drain enough of the water off because it was a little watery as you’ll see in some of the photos.

That’s it! An uncomplicated, yummy, healthier take on a favorite comfort food!! We loved it paired with gluten free fried pork chops! Check out the recipe for cauliflower mac and cheese here.
