Pizza Night! Gluten Free Pizza AND Cheese Sticks!

We ate our veggies in a fun way tonight - snuck into our pizza and cheese sticks! That’s right. Gluten free pizza AND cheese sticks for this wild Saturday night in! I absolutely love the Caulipower pizza crusts (made from cauliflower) for an awesome gluten free alternative. We kept it simple with pepperoni as our topping (Penny approved) and paired it with recipe I was super excited to try out - Zucchini Cheese Sticks! These gluten free wonders were delicious and required very few ingredients! They were made even easier with the help of a new gadget I can’t wait to tell you about!

First of all, if you’ve not tried Caulipower pizza crusts, you’re missing out. If you’ve been on the fence about anything weird from cauliflower, I understand, but… you’re really missing out! This brand has become my go-to gluten free frozen pizza option. Plus, I love “building” my own pizza at home! These are a great deal too because you get two crusts in a box, and I think Walmart sells them for under $7 a box. Secondly, zucchini cheese sticks?!?! Whatttt! Yes, you read that right. I have seen so many interesting zucchini recipes lately that I’ve been wanting to try and this one seemed like a great way to take another night at home and make it more fun! We love a good pizza night but splitting a Caulipower pizza usually isn’t enough food, but we don’t want to bake two pizzas, so we’ve not done a build-your-own pizza night in quite a while. We were so pleased with how these cheese sticks turned out!!

And as I teased in the intro to this post, they were made extra easy with the help of a handy dandy new gadget. I had one small grater that finely grade things but I needed one with bigger holes for shredding the zucchini. We picked this one up at Walmart without giving it much thought and quickly realized how awesome it is! It has a little tray that slides out and catches whatever you’re grating, plus it has marks to help you measure as you grate!

But wait there’s more — IT HAS TWO-WAY GRATING! Meaning, you can slide your zucchini (or cheese) back and forth, cutting down on time! HOW COOL IS THAT??? And heads up - it was way cheaper in stores! We paid $9.97 for it in stores, however it lists for much more on Walmart’s website.
