Pulled Pork Tacos

This weekend, we broke out the Crockpot! I hadn’t used it in quite a while but had found a recipe for slow cooker pulled pork and wanted to give it a try. Y’all this was so good! And it gave us enough to eat on for lunches for a couple days!

The recipe suggests putting the BBQ sauce in with the meat after pulling it apart with a fork but we decided to add the sauce sparingly when eating the meat instead. We used some corn tortillas and had some fun with the toppings to make pulled pork tacos! Our toppings included a little bit of BBQ sauce, shredded red cabbage, Pico de gallo, crushed pineapple, light sour cream and crumbled Cotija! (I did not eat the Pico but Darrell loves it so he did.) We used Mission White Corn Tortillas (microwaved them with a damp paper towel for a few seconds before building your tacos!)

Such an easy meal and perfect for lunches! We will definitely try this recipe again and maybe change up the seasoning next time around!
