Quick and Easy Air Fryer Shrimp Meal

We got an air fryer!!! My father-in-law sent us our Christmas present early and we are so grateful! I’m not one to jump immediately onto the kitchen gadget bandwagon but I’d heard so many wonderful things about air fryers and my husband and I both started looking into buying one a few months ago. I wasn’t sure if we’d be “hooked” quite to the extent of everyone else but I was excited to try it out. Oh my goodness… We use it almost daily! It makes cooking healthier meals a quick and easy option!

One of our new favorites for the air fryer is this “skillet” type of meal (all in one… kinda…). It’s great for nights when we are pressed for time and it’s a meal you can prep for in advance if you wanted!

Typical us, we made a couple changes to this recipe, although not because of allergens. Check out my notes from this recipe and the link for it below.

Notes

  • The day I went to the grocery store to cook this for the first time, they were out of red bell peppers so we used an orange bell pepper (the first time either of us tried one) and we loved it! One time we tried a red bell pepper and decided we actually prefer the orange bell pepper.

  • We use avocado oil for this recipe instead of olive oil. No real reason other than I’ve just been on a kick of using more avocado oil lately, haha.

  • I cook a can of whole kernel corn on the stove while the rest of the meal cooks in the air fryer. It was a random decision when trying to figure out what to add to it and I just scooped some on top of the plated meal and topped with additional grated parmesan. I will say, we eat this as a two serving meal so it ends up being quite a bit of corn-to-everything-else ratio, but it is still excellent! It rounds out the meal, in my opinion.

If you’re looking for a way to cut down on time even more, try chopping the peppers and zucchini ahead of time!
