Steak, Potato & Asparagus Skillet

I grew up in a meat and potatoes kind of household and while every meal had a dinner roll accompanying it back then, I can’t have the roll anymore (obviously) and I try to cut back on potatoes and red meat. So I’ve really had to expand my horizons in the kitchen and grocery store! But it’s been fun. This skillet meal is easy and so tasty! It’s the comfort of meat and potatoes and the colorful fancy look of something much more complicated!

Trying this recipe only once so far, I will say I’ll likely opt for a faster cooking option for the steak next time or just get started a whole lot earlier because it took forever in my opinion. I should note though that I get a little nervous cooking steak so I ended up cooking it a little too long. Le sigh. What can a girl do?

Notes

  • I didn’t use mint in the herb dressing only because I didn’t have any on hand but it still tasted amazing! Seeing how I don’t currently cook often with mint, I’ll probably go without when cooking this meal again.

  • I worked with a little under a pound of steak (which ended up being too much for Darrell and I) and therefore cut back on all ingredients.

    • Red potatoes - I buy the little bags of the red potatoes at the grocery store and I ended up using just a little over half.

    • Asparagus - This recipe called for one bunch, but since I cut back on everything, I cut up what I thought we would reasonably eat to make this a two person meal.

    • Herb dressing: I cut this dressing recipe in half and did not use mint.

  • Story time in the notes section… gather ‘round children… Once upon a time I tried a recipe that called for red pepper flakes... no not this one, (a recipe that did not get a blog post!) and I went way overboard and we barely survived that meal!! So needless to say, I go sparingly on the red pepper flakes now and when Pure Wow’s recipe called for “a pinch” I used like half a pinch!

  • So here’s the sitch on the steak… Cooking steak makes me nervous. The recipe called for more of a medium rare and we’re more like medium to almost medium well people… so then I overcooked it somehow. Probably because it was a thick cut of meat and took forever to cook through. Moral of the story: we just prefer to cook the steak in the skillet (forgoing the oven route - just for the steak part of this recipe). Cutting the steak into bite size pieces before cooking. This is just quicker, cooks evenly, easier, etc. But that doesn’t mean you have to go that route!

Final Thoughts

We. Loved. This. Meal. Definitely going to be a repeat. It’s delicious, it’s a different take on foods we already love and it’s simple.
