Cranberry Apple Slaw

Looking for a refreshing summer side dish? Look no further! This cranberry apple slaw is cool and tasty! I only recent tried slaws of any sort and it makes me wonder what I ever thought I wouldn’t like about them lol! I love dried cranberries in salads so this recipe caught my eye. I love the different textures in this slaw and how colorful it is!

One way to make this recipe really easy is to buy pre-shredded cabbage and carrots! The less you have to chop, the quicker you can throw it together. I can see this being an excellent side to bring to cookouts or family gatherings!

Carrots, cabbage, apples, green onions… I love all the fresh flavors!

  • Ingredients

    • I used light mayo.

    • I left the almonds out for mixing it all up since Darrell is allergic to nuts and just added them as a topping on mine.

  • Servings - This recipe allows you to change the number of servings so I knocked it down from 8 to 4 so we could have enough for a dinner side + a lunch side for the next day. Measurements get a little whacky but it is doable to make this for fewer than 8!

  • It seemed like too much dressing in my opinion. I think the next I make this I’ll stir in the dressing a little at a time until it’s how I like it. But that’s just me!
