The Salmon Recipe You Need to Try This Week

More pandemic cooking happening over here! Last night we tried a recipe for Creamed Spinach Stuffed Salmon. Now don’t panic if that name doesn’t sound enticing. I probably wouldn’t have gotten excited solely by the name either, but I was intrigued by a video and WOW guys! This is like restaurant quality salmon! SO IMPRESSED!

Not only is this quick and easy (always a plus in my book because who has time for a really involved meal on a weeknight) but it was FULL of flavor and the salmon turned out so perfect! We enjoyed this meal with a side of rosemary roasted radish. Apparently, I was wrong in my last post and there WERE leftovers from the loaded cauliflower bake so Darrell reheated those for an additional side. We dine al fresco again, taking advantage of the beautiful weather and my sister & brother-in-law’s cute little front porch.

We picked up a large salmon filet (large as in enough to feed the two of us) from Kroger on Saturday. We had some frozen salmon filets in the freezer but I am glad we opted for fresh because I think it made a difference. I don’t mind baking frozen salmon (I guess because I’m usually baking it in some pouch concoction) but I prefer fresh when cooking it.

So without further ado, here are some notes from our experience with this recipe from Delish. P.S. If you love recipe videos, you’re going to like this recipe!

Notes

  • We used fresh spinach and chopped it into very small pieces so it wouldn’t get stringy.

  • For cream cheese, we just typically buy Great Value Neufchâtel cheese and are pleased with the results.

  • We mixed up enough of the mixture for the full recipe but only used about half due to the number of servings we needed.

  • Be sure to use a nonstick skillet! We started out using a stainless steel skillet and quickly realized that was not going to work. Darrell switched it over to the nonstick and things went much smoother!

This recipe is free of gluten, nuts, legumes and poultry. Always check your ingredients when shopping!
