Soup Sundays: Broccoli Cheddar Soup

It’s the first Sunday in the Soup Sundays Series!!! I’m so excited to begin this series. If you remember a few weeks ago I asked y'all to share some of your thoughts on soup and I’m glad to see I have company in the soup-before-cold-weather camp!

To kick things off, let’s talk about this broccoli cheddar soup! I had to swap out a few ingredients in this recipe to make it work for us. It’s relatively simple but it does require a lengthy list of items from the grocery, probably not something you’ll throw together with things you keep on hand. I mean maybe, I don’t know your life haha.

Darrell isn’t a big soup fan - mainly not a fan of hot liquids… coffee, soup, etc. - so for him to give a soup a try it needs to be decently thick. I wouldn’t consider this to be a super thick broccoli cheddar but it passed his test and we both really enjoyed it! It’s one worth repeating in our book!

Interestingly, this recipe calls for potatoes and we like that additional substance.

Making This Soup Gluten and Poultry Free

(plus one more change)

Two important ingredients had to swapped to make this recipe gluten free and poultry. If you make a lot of soups, you can probably guess these ingredients. Flour and chicken broth. I used my tried and true Bob’s Red Mill Gluten Free 1-to-1 Baking Flour and the superior vegetable broth on the market… that’s right, Swanson Vegetable Broth. Additionally, shallots are our onion of choice and although not because of a dietary restriction, simply preference, so we swapped the yellow onion for shallot.

The Verdict

All in all, this was delicious! Darrell says it could use more cheese. I somewhat agree. I think in general I’d like it to be a little thicker and I’m no soup expert but I’d guess there are a few ways you could do that.

More About the Sunday Soup Series

This series will go on for at least the next few weeks, although depending on the response, I’m considering stretching it out for a while. I am super excited to share some of the soups I love… Some Sundays I’ll share one of my own recipes, some will be recipes we’ve found elsewhere, and I think I’ll include some store bought soups I highly recommend.
