Spinach and Artichoke Stuffed Sirloin

Another #easyfancy dinner! This is a great “date night in” meal to cook as a couple. We love risotto night and it’s always fun to mix it up - whether that be the risotto itself, or what we serve with the Italian dish to make a meal. Darrell found this recipe for spinach and artichoke steak roll-ups and it was a flavorful break from the ordinary.

If you love spinach and artichoke dip, you’ll likely love this dish! We paired it with the risotto recipe we love so much we once ate it three nights in a row… red wine and goat cheese risotto! 😋

Notes / Our Changes

  • The recipe called for flank steak, however, we are rarely pleased with that type of steak so we went with sirloin instead. Personal preference, of course. Darrell made sure to tenderize it.

  • We had a white cheddar cheese made from goat’s milk. It’s the Trader Joe’s Goat Milk Cheddar and I highly recommend it!! So good. Five stars!
