Maple Roasted Carrot Salad
A new salad obsession - this Maple Roasted Carrot Salad is something you could eat for lunch year round but also makes a totally perfect side dish to serve your family over the holidays… So delish! My health coach, Liz, came to the rescue when I was burnt out on my salad rotation and this is one of the recipes she highly suggested. It’s so dang good, I had to share about it on the blog!
This recipe is from none other than Barefoot Contessa, Ina Garten. So that right there tells you it’s worth trying! It was super simple and packed with flavor. I love the ingredients… roasted carrots (obvi), dried cranberries, goat cheese… among others. And I’m definitely down for any excuse to eat Marcona almonds!
For a little protein, I added this organic grilled chicken from Trader Joe’s. My new favorite chicken for salads!! Another suggested try from Liz!
And for funzies I added some dandelion greens because, Liz worked her magic and has us eating crazy things like that AND enjoying it ;) haha
