Summer Squash Casserole
I love finding a new veggie side dish that’s easy and delicious because it makes me 10 times more likely to eat more veggies!! We recently tried this Summer Squash Casserole with a minor modification and it is definitely a dish we’ll be cooking again. Check out my recap for our experience with this recipe modification below!
Summer Squash
Not a vegetable I often think of, this was something I wanted to try to incorporate into our menu last week just to try something different. We like zucchini and y’all already know we can’t say no to cheese.
What I Did Differently
Really the only thing necessary was a swap for gluten free bread crumbs. Now this recipe calls for panko breadcrumbs and multiple retailers sell a gluten free version of panko bread crumbs but we already had plain gluten free on hand and since we don’t use them often, I didn’t want to go out and buy gluten free panko bread crumbs. And I’m happy to report that plain gluten free breadcrumbs made this super tasty! So use whichever you have on hand or prefer! I’ve linked the bread crumbs I used below. At the bottom of this post, I’ve linked a variety of other regular and panko gluten free bread crumbs found at Amazon and Walmart. You can find the recipe I used from Evolving Table, here.
