Our new favorite side dish!! These carrots have become quite the repeat dish lately! In fact, I think we had them with two meals this week and one last week! The flavor is fantastic and it’s simple enough that we typically have everything for the glaze on hand and I now just whip up the glaze with what looks about right for the number of carrots we’re roasting - it’s pretty fool proof!

Pomegranate and Brussels Sprouts Salad

Salads! A long lost friend since coronavirus began. Generally speaking, I’m not a fan of making salads at home because I feel like it doesn’t matter what I do, they do not taste restaurant-quality and the dressings in particular seem to require a ton of ingredients that I don’t keep on hand. So I end buying weird ingredients and the cost adds up, then the DIY dressings rarely taste awesome and I end up with a bunch of random stuff taking up space in my fridge door or pantry because I needed a tablespoon of it once upon a time. Anyone else feel my pain in this department?? All of that to say, I was pleasantly surprised to LOVE this salad!! So much so, I had a bowl of it again today.

Cauliflower Mac and Cheese

Cauliflower - meh! Cauliflower with cheese - I’m listening!! Can anyone else relate?? Darrell has been the driving force in trying cauliflower-based foods. Knowing he likes it has me looking out for cauliflower-related recipes. The loaded cauliflower turned out sooo yummy last month so when I came across a recipe for cauliflower mac and cheese I thought we’d give it a try! The first time we tried this recipe was actually the night I photographed the fried pork chops for the blog. It was our side dish that night and then Darrell cooked it for lunch one day earlier this week!

After our wedding, Darrell and I spent the weekend at Boone Tavern for a mini honeymoon. With the pandemic, we couldn’t really go out to restaurants but we enjoyed ordering room service from Boone Tavern’s delicious menu. I was also surprised at the number of gluten free items or alternatives they provided! One night we ordered the most amazing brussels sprouts. When trying to find a recipe to recreate the dish at home, we came across these Maple Dijon Brussels Sprouts. While they’re not an exact match, they’re incredibly tasty and simple!

Everything's Better with Cheese: Loaded Cauliflower

I’ll be the first to admit, I’ve had a rough time jumping on the cauliflower bandwagon. I’ve tried roasting cauliflower a few times and I’ve just not mastered it and there are so many other veggies I DO like roasted that I just haven’t made as much of an effort. We’ve tried mashed cauliflower a total of like 2 maybe 3 times and it’s just no… Darrell really liked it but I can’t get into it and then it smells weird in my opinion. But I know how much my *hubby* likes cauliflower so I did some Pinterest digging last week and found a recipe that sounded reasonable. Spoiler alert: I LOVED IT! Also, it is loaded with a bunch of stuff so that’s probably why… Pro tip: You can make all sorts of food you’re not crazy about actually great when you douse it in cheese and bacon!! :D Don’t judge.
