Trader Joe's Gluten-Free Pumpkin Muffin Mix

One of my absolute favorite treats at Thanksgiving and Christmas growing up was always pumpkin bread. Mom would bake it from a Pillsbury Pumpkin Quick Bread & Muffin Mix and it was delicious! Gluten-free breads just generally don’t bake well in my experience. In recent years, I discovered Trader Joe’s Gluten-Free Pumpkin Bread and Muffin Mix. I love to buy up a few boxes when this yummy seasonal mix hits the shelves in early fall.

Gluten-Free Loaded Potato Soup

The weather man is calling for snow and it’s dark at like 4pm now. So basically it’s soup weather. I grew up eating potato soup with “ho cakes” aka fried cornbread. The soup itself wasn’t thick but we’d crumble up the ho cakes into our soup bowls. Without the ho cakes, the potato soup just isn’t the same so I’ve not cooked it since going gluten-free. Unfortunately, most thick soups like I desired call for flour and are therefore full of gluten. But I found some gluten-free flour I had used for other recipes and decided I wanted to experiment with a loaded potato soup recipe. Meatloaf Memories

One of my favorite meals growing up was meatloaf. But only dad’s meatloaf because I knew what all went into it. Dad used his mom’s recipe (my Nay-Nay) but changed it up a bit. After going gluten free, I decided to take dad’s recipe and modify it so that I could still enjoy a childhood favorite. And it honestly doesn’t taste much different than dad’s! My little brother recently came to town to help with a project and I served him some leftover gluten free meatloaf and he couldn’t tell the difference!
