Gluten Free Key Lime Pie (With a Shortcut)

Anyone else a sucker for basically anything in a graham cracker crust?? 🙋‍♀️ Baking a gluten free key lime pie is one of the activities on my unofficial summer bucket list and this week I finally checked it off! I took a shortcut though, when I came across this gluten free pre-made graham cracker pie crust at the grocery!

I spent forever and a day at Walmart on Monday and when they didn’t have an exact match for a few of the items I needed for this pie, I just made do with what I could find because I really didn’t have the time to run to another store hoping to find what I needed.

So let’s talk about what I swapped.

First, the recipe I used actually detailed baking your own graham cracker crust (which sounds like fun and was what I intended to do using Schar Cookie Honeygrams. But then I came across this pre-made crust and thought, even better! It hasn’t held up as wonderfully as I hoped but it tastes amazing!

Secondly, the store was out of regular sweetened condensed milk (my sister and brother in law got me hooked on Eagle Brand in particular, they say nothing else compares) and so I went with the only thing Eagle Brand I could find, which happened to be fat free and I decided what the heck? We’ll give it a try. Cut a few calories where we can. I honestly can’t tell a difference so I am very pleased!

Third, I couldn’t find true key limes so I settled for a bag of regular limes. And while it is said it won’t make the flavor just right, I think it tastes pretty limey!

So overall, I’m super impressed with this little not key, key lime pie!!

Also, for laughs, I have to share that I had never used a lime juicer / citrus squeezer so I Googled how to correctly us it LOL! The cut part goes down onto the holes, in case you’re curious. The round part pushes the skin side. I can’t be the only person who wasn’t sure!! Side note: it takes quite a few of the tiny limes to squeeze out 3/4 cup of juice - FYI! Like most of the bag, I’d say.
