Gluten Free Pumpkin Pie

PUMPKIN PIE!!! Holiday season = pie season. It’s as simple as that! I just couldn’t hold out until Thanksgiving and had to whip up a pie yesterday!! The ultimate holiday duo, Libby’s 100% Pure Pumpkin and Nestle Carnation Evaporated Milk, make this pie fool proof! I used Libby’s Famous Pumpkin Pie recipe, and swapped out normal pie crust for a gluten free crust from Trader Joe’s to make this favorite dessert gluten-free and food-allergy friendly for our household! And it’s just as good as the “real thing” in my opinion!!

A note for those using a frozen gluten free pie crust: check the pie recipe AND the crust instructions. You’ll likely want to stick with the pie recipe instructions and forgo any crust pre-baking.

This recipe made a little more pie filling than my crust could hold so I didn’t use quite all of it. Pour carefully!

Trader Joe’s Gluten Free Pie Crust is delish and while any gluten free baked good usually crumbles, I’d say this crust crumbles no less than a gluten-full crust, haha. I’ve also decided that I prefer pumpkin pie cold. It was even tastier today after being in the fridge than it was when it was first baked.
