Earlier this month, we braved the forecast and met up with some of our Kentucky friends for a weekend of tent camping in Tennessee’s beautiful Smoky Mountains. It is so nice to live within driving distance of friends and family, definitely one of the perks of leaving NYC. We may have kinda sorta been waterboarded the first night when our tent leaked but Darrell saved the weekend (and our sanity) by going out as soon as Walmart opened and buying the largest tarp for sale! Read MoreIt’s time for the third installment of the Soup Sunday Series!! This is so fun! Have you tried the broccoli cheddar soup or the loaded potato soup? I’d love to hear about your experience! This week I’m sharing a new recipe!! As I’ve mentioned, Darrell isn’t the biggest fan of soup but I’ve found a few he’s grown to love haha. Usually, if it is something thick, he’s open to trying it - which makes a chowder a good option. This recipe is my take on a zucchini corn chowder. I managed to sneak in some extras to give it more substance like carrots and potatoes! Check it out below!

Read MoreI had a blast cooking with about 150 people from across the country this morning! 😱 My first time leading a virtual cooking class! “In the Kitchen with The Amateur Apron” was a session for the National 4-H Volunteer Conference! 4-H has played a major role in my life, and my husband’s life, and when I was approached by a blog reader to do this segment I knew I wanted to do it! Thanks to Darrell for being my “sous chef” / assistant / camera guy / picture-taking blogger husband. It has been so sweet to watch photos roll in from participants and just to actually cook alongside so many awesome 4-H people all across the country! We baked spoonbread, which is a dish native to my hometown!
