Pulled Pork Sweet Potato Nachos

Cinco De Mayo kind of snuck up on us in this weird state of quarantine and isolation so last night we went with the meal on our dinner list for the week that was closest to tacos haha… If you consider Pulled Pork Sweet Potato Nachos to fall anywhere close to that category!

The Salmon Recipe You Need to Try This Week

More pandemic cooking happening over here! Last night we tried a recipe for Creamed Spinach Stuffed Salmon. Now don’t panic if that name doesn’t sound enticing. I probably wouldn’t have gotten excited solely by the name either. But I was intrigued by a video and WOW guys! This is like restaurant quality salmon! SO IMPRESSED!

Everything's Better with Cheese: Loaded Cauliflower

I’ll be the first to admit, I’ve had a rough time jumping on the cauliflower bandwagon. I’ve tried roasting cauliflower a few times and I’ve just not mastered it and there are so many other veggies I DO like roasted that I just haven’t made as much of an effort. We’ve tried mashed cauliflower a total of like 2 maybe 3 times and it’s just no… Darrell really liked it but I can’t get into it and then it smells weird in my opinion. But I know how much my *hubby* likes cauliflower so I did some Pinterest digging last week and found a recipe that sounded reasonable. Spoiler alert: I LOVED IT! Also, it is loaded with a bunch of stuff so that’s probably why… Pro tip: You can make all sorts of food you’re not crazy about actually great when you douse it in cheese and bacon!! :D Don’t judge.

Murray's Mac: Gluten Free Goodness

When Darrell and I took a little trip to NYC to figure out what life would look like in the big city, we ate at some amazing restaurants. I snapped photos knowing I couldn’t really share about our adventures until later. So now is later. Possibly the best casual dining gluten free pasta experience I’ve ever had was that weekend at Murray’s Mac and Cheese.

Trader Joe's Gluten-Free Pumpkin Muffin Mix

One of my absolute favorite treats at Thanksgiving and Christmas growing up was always pumpkin bread. Mom would bake it from a Pillsbury Pumpkin Quick Bread & Muffin Mix and it was delicious! Gluten-free breads just generally don’t bake well in my experience. In recent years, I discovered Trader Joe’s Gluten-Free Pumpkin Bread and Muffin Mix. I love to buy up a few boxes when this yummy seasonal mix hits the shelves in early fall.

Gluten-Free Loaded Potato Soup

The weather man is calling for snow and it’s dark at like 4pm now. So basically it’s soup weather. I grew up eating potato soup with “ho cakes” aka fried cornbread. The soup itself wasn’t thick but we’d crumble up the ho cakes into our soup bowls. Without the ho cakes, the potato soup just isn’t the same so I’ve not cooked it since going gluten-free. Unfortunately, most thick soups like I desired call for flour and are therefore full of gluten. But I found some gluten-free flour I had used for other recipes and decided I wanted to experiment with a loaded potato soup recipe. Unfortunately, most thick soups call for flour and are therefore full of gluten.

Pumpkin Risotto

While I know people can easily go a little overboard with pumpkin flavored foods, I promise this one is sooo worth it! And out of fear of going too far with the pumpkin taste, I cut back on just how much pumpkin purée I used in this recipe and I explain that further down in the notes section of this post.
